It is hard to think of a comfort food that is better than mac and cheese. Steamy pasta with just the right amount of crunchy bread crumbs and maybe a bit too much cheese puts a smile on everyone’s face. This recipe is so easy, you will never find yourself ripping the top off that blue box again!
Mac and Cheese
INGREDIENTS
1 small onion chopped
2 Tbs olive oil
3 cups milk
3 Tbs butter
1 Tbs flour
1 box favorite pasta
2 cups shredded Mexican blend cheese
1 cup Italian style bread crumbs
4 strips bacon
INSTRUCTIONS
1- Cook bacon in microwave until crispy. Once cooled, crumble and set aside
2- Heat olive oil in a pan, cook onions until translucent and set aside
3-Cook pasta a little less than package directions for al dente. (you don’t want it fully cooked since you will be cooking further in the oven) Drain and set aside, covered.
4- Pre-heat oven to 375 degrees.
5- In a medium saucepan, over medium heat, melt butter. Add the flour and stir until it thickens.
6- Slowly add milk while stirring. Let simmer then continue to stir until thick.
7- Slowly add cheese while stirring. Continue to heat and stir until completely melted.
8- Add bacon, onion and 3/4 cup bread crumbs to the cooked pasta and mix.
9- Add cheese and mix until thoroughly coated.
10- Transfer pasta to a coated baking dish, top with remaining bread crumbs and bake until golden brown.
