When you walk through Downtown Paso Robles on a warm July afternoon, it’s easy to focus on the lively tasting rooms, outdoor patio dining, and cold glasses of Rosé or your favorite white. But just a few miles outside downtown, across the rolling hills of the Paso Robles AVA, a high-stakes transformation is underway.
July in the vineyard is often called the “calm before the storm”. Harvest isn’t here yet, but the work done under the midsummer sun over these four weeks will directly define the structure, balance, and aroma of the wine in your glass two years from now.
