pasta in vodka sauce

I love penne in vodka sauce and although my version is not as creamy as the ones I get at restaurants, I do think that it is a bit healthier. Not that ther eis anything healthy in the dish, but I do limit the what makes it creamy, but the deliciousness is all there! 

Penne in Vodka Sauce


INGREDIENTS:
1 pound pasta (I use Barilla whole wheat)
1 pint of fat free half and half
1 can 28 oz. whole peeled plum tomatoes
6 oz. sundried tomato pesto
1 cup shredded mozzarella cheese
2 oz. vodka
2 cloves garlic diced
salt and pepper to taste
1 tsp. hot pepper 
1 Tbs olive oil

DIRECTIONS:
1- Bring a large pot of water to boil
2- In a heated pan, warm the olive oil and heat the garlic (do not brown)
3- Add to the pan, crushed whole plum tomatoes and simmer to reduce the liquid; add salt and pepper to taste
4- Once reduced add the sundried tomato pesto and mix
5- Add the vodka and hot pepper and stir to combine
6- Cook pasta as instructed; drain and return to pot
7- Remove sauce from heat and add half and half; stir to combine
8- Add sauce to the pasta and mix
9- Add cheese and stir
10- Serve immediately
